Antinori – Badia a Passignano Chianti Gran Selezione 2016.
Good quality ingredients and a good pairing is all it takes.
Color: ruby red, slightly bricking rim. Nose: Just perfect maturity for this wine! It has ripe cherry, sous bois, dried wild raspberry, wet rocks after rain (I want to avoid using the word minerality) and a hint of VA.
Taste is surprisngly full bodied and good backbone of acidity. for a Chianti. Tannins are quite mellow already. Taste has cherry, ripe raspberry, cinnamon and light rusticity on the background. Finish is long and fades beautifully into spice. Good acidic lift keeps it fresh.
Classic beef tartar, 36 month Parmiggiano on top.

Chianti Classico Gran Selezione is underrated. Great with or without food and usually punch above their price for me.
