This is my one pot, one portion broccoli cheddar mac and cheese and it is the creamiest, most comforting dinner with a little bit of green thrown in there for good measure. Plus, it only takes about 15 minutes and you don’t have to share it with anybody else. You want to start by cooking the onion and garlic down on a low heat until soft and jammy. Then add a little bit of flour, not too much because the starch from the pasta will also help thicken things up. Add water and milk. Then of course the broccoli and the macaroni. Now let’s talk about cheese. This recipe is kind of a hybrid between soup and pasta. And while broccoli cheddar soup is pretty common in the states, broccoli and stilton is an English classic. And when it comes to cheese, more is more. So I use both. Cheddar for a sharp salty depth and blue cheese for a creamy tang. Freshly grated nutmeg and whole grain mustard complete the flavors. And then all that’s left to do is tuck in.

  1. I love your videos, the one-pot one-portion thing is a game changer! Truly. But this recipe is a miss for me. I get the idea that it's kind of a soup? but it really just seems like watery mac and cheese. I don't mean any offense, just some feedback that it seems like this recipe could use another pass.
