Ingredients:
• 1 cup black chickpeas (boiled)
• 1 cucumber, chopped
• 1 forest cucumber (or use a regular cucumber if not available), chopped
• 1 tomato, chopped
• 1 small onion, finely chopped
• 1 radish, thinly sliced or chopped
• 1-2 green onions, chopped
• Juice of 1 lime
• Salt and black pepper to taste
• 1 tbsp olive oil
Optional Add-ins for more protein:
• Feta cheese cubes or crumbled paneer

Instructions:
1. In a large bowl, combine all chopped vegetables and boiled black chickpeas.
2. Drizzle with lime juice and olive oil.
3. Season with salt and black pepper.
4. Toss well and serve chilled or at room temperature.
