I’d have mine about medium if I were to have it. Never tried it though. They call it basashi in Japan, if I remember it correctly. They eat it sashimi style. Kumamoto is famous for it

I’m in China. Walmart sells donkey meat. Haven’t seen horse meat but I’m sure it’s available.

Horse is fine. In some European countries (France, Switzerland, Austria) you can buy it at most regular grocery stores. It tastes quite different, not like beef, but it’s not intensely different like mutton can be. It’s mild, like beef. The smell is a bit more intense though.
I prepare it as steaks. Hard sear, medium rare to rare inside, maybe some butter basting and fresh herbs. Goes well with the usual sides.

I’m from Belgium and eating horse meat is normal here. Horse steak can be tough but filet can be soft and delicious. It’s a bit sweet and fairly lean. I’d recommend anyone to try it.
