    Flanken ribs, if you have a Mexican grocery store near you they’ll be sold already seasoned. They’re a pricier cut but not as expensive if you were to get them at a chain grocery store like Tom Thumb/Safeway or Kroger/Smith’s.

    Tablitas are good any time of the day.

    It’s a slab of beef short ribs cut across the bone. Often referred to as kalbi, galbi, tablitas, costillas de res, and flanken.
