








Typical from Puglia in the South of Italy , this dish tastes way better than it might look or sound to many. Simply delicious. The only grated cheese to be used here is pecorino romano. I believe normal parmigiano might actually ruin it.
Cauliflower has to be preoboiled and has to be soft and can be still a bit crunchy though before going into the pan

Pre-shredded cheese doesn’t count. It have so many additives.
Okay, and if I may ask cause you phrased it really drastically. Why would ‘normal’ parmigiano ruin the dish?
You use the language of a gourmet chef. Only my parents, in my life, served me Orecchiette. I’ve grown nostalgic right now, have not had them in years. Thank you for keeping the tradition alive, I can taste this dish from here. Amazing photos, I appreciate the info.
