I’m curious what culinary school you go to that would call these eclairs? They are not. Much closer to a profiterole/chouquette or religieuse. Also the cream on top looks over whipped and the pipe work needs some help, your chef instructors should know better. I apologize if this comes off as condescending, just wanted to give some constructive feedback 💕
