Usually I make our egg salad from tofu and/or chickpeas. Every once in a while though we like to just play around with new products that are out there, if nothing else but to support the availability of vegan products on the shelves.

Gave the Wunder Eggs a try and I have to say that while they are pricey, they were awesome to work with. Was particularly very shocked at how similar the egg whites were to what I remember egg tasting like. Topped with tomato and some lettuce from the garden 🙂
