So my daughter just turned one today, and the wife and I decided as a birthday tradition, she will have a Tomahawk steak for her birthday dinners every year.

First time doing a T-hawk. 24 hour dry brine, sous vide 133° (might do the 137 club next year) for 3.5 hours, seared in cast iron pan, finished with compound butter.

I need to work on my final presentation.

And yes the little one was able to enjoy a few bites (she was super tired after her big day so she was ready for bed by the time I finished cooking it) and the few bites she took she loved.

    Am I the only one wondering about the big lumps of cold/solid butter on the cooked steak? Unless the steak was super hot and it melted the butter…I’d have done it differently.
