Las Vegas (KSNV) — Famous for its fine Mediterranean seafood imported fresh daily, Estiatorio Milos (Milos) will be leaving The Cosmopolitan and bring the flavors of Greece to The Venetian Resort in spring 2021.

One of the most influential chefs in Greek cooking, Costas Spiliadis believes food is best in its purest form, simple and perfect using the most the highest quality ingredients and cooking with precision so interference with nature is minimal.

Like its sister Milos locations, the seafood will be flown in daily from the Mediterranean then put on display in the restaurant’s signature fish market where guests can make their selection. In addition to the vast variety of seafood like whole fish in sea salt, tuna, lobster, salmon, and octopus, Milos is also famous for the Milos Special which is served as a tower and made of fried paper-thin zucchini and eggplant with tzatziki at the base and within.

Many of Milos dishes are meant to be shared family-style.

Milos will be open for lunch and dinner when it debuts at The Venetian’s Restaurant Row in 2021.
