This Italian Chocolate Torte is similar in texture to a brownie, but uses Almond flour instead of regular. The texture is dense, fudgy and super moist. It goes so well with a scoop of Vanilla Gelato!

Ingredients:
2/3 C unsalted butter
3/4 C good quality chocolate chips or bar chocolate
1 T rum
4 Eggs SEPARATED
1/8 t salt
2 C Almond Flour
3/4 C Granulated Sugar

Well, hey everybody. Welcome back to my channel. If you’re new here, I am so happy you stopped by. First of all, please ignore this awful looking thing on my forehead. I had to have a precancerous lesion removed and it’s leaving this horrible, horrible scab. So, but I know I it was important that I had to have it done. So, please excuse me. But today, but that aside, I’m gonna be showing you how to make the most amazing dessert today. It’s called a tora caprese and it’s a flowerless almond chocolate tor. Now, I got this recipe from my friend Daniela over at Black Cat Kitchen. Now, if you don’t know her channel, I’m going to link it below. She has the best authentic Italian recipes on her channel from her nona and just her um heritage background. And she also makes other types of recipes too, but she kind of specializes in Italian recipes. And um I am having a I’m catering a dinner party next week and this is going to be their dessert along with some um raspberry gelato to go with it. And I think my guests are going to absolutely flip for this. It’s so easy to make and it’s super moist, super chocolaty. So stay tuned and I will show you exactly how to make it. We’re going to need 2/3 cup of butter, 34 cup of good quality semieet chocolate pieces, 34 cup of granulated sugar, four large eggs that we’re going to separate the whites from the yolks, 1 tbsp of dark rum. Now, if you don’t want to use dark rum, you could use a couple teaspoons of vanilla, an 1/th of a teaspoon of salt. We’re going to need some almond flour. Two cups. That’s just finely ground almonds. Now, I’m making mine a little bit different than um she did. I’m microwaving the chocolate and the butter instead of using a double boiler. And while that’s microwaving, we’re going to add our granulated sugar and our egg yolks. Now, this microwaved for 1 and 1/2 minutes, and I took it out and stirred it halfway through, and it comes out really soft. uh really smooth and silky. Now take your electric mixer and beat your sugar and your egg yolks for 3 to five minutes or until they turn a light light pale and they look like this. And they’re going to form a ribbon. See how it kind of ribbons off my spatula? So you basically want them to double in size. Then we’re going to add our cooled melted chocolate butter mixture. my dark rum, my 1/8 of a teaspoon of salt, and I’m just going to mix all that together for about 30 seconds. Once that’s done, it will look like this. Now, in a separate small bowl, take your four egg whites and we are going to use our mixer again and we’re going to beat them until they turn medium to stiff peaks. This could take anywhere from 1 to 2 minutes. Just keep mixing and see how it’s they’re soft peaks now. So, I mixed it a little longer and now they’re mostly firm peaks and it will hold on a spoon without falling off. Then I went ahead and add my almond flour to the chocolate mixture. And then we are going to take 1/3 of those whipped egg whites and gently fold them into the chocolate mixture. We’re trying to not um get out the air from the egg whites. So we’re going to gently fold those in. And once you have that 1/3 mixture in, you can go ahead and add in the rest of the egg whites. and just continue to fold it until it becomes smooth and you don’t see any more of the white specks of the egg white. It will look nice and fluffy like this. Now, I have a spring form pan. It’s like a cheesecake pan. I greased it really well. Put parchment paper on the bottom, but you could also use a round cake pan. Now, you want to gently put your um batter in there. Now, this was for a dinner party, so I made a tiny one for myself just so I could make sure it tasted good. Now, you’re going to bake this for about 30 minutes until a toothpick comes out clean. And here is the small one. And you guys, this is so amazing. It’s fudgy, so moist. It’s so flavorful, and I think anybody in your family or your friends will love it. Then, you’re just going to put some nice powdered sugar on the top. You can make a little decoration like I did. And this is how it turned out.
