This focaccia/pizza was everything I could ask for today.
Ingridients:
500 gr bread flour
450 gr lukewarm water
3 tsp salt
7 gr active dry yeast
1 tsp salt
3 tbs olive oil evo
Tomato sauce w/ basil, salt, oil and black pepper mixed in
Chopped mozzarella

Mix flour and salt together. Activate the yeast in the warm water with tsp sugar mixed in.
Mix the water with yeast with your flour. Let it rest 30 minutes. Add 3 tbs of oil, knead until combined and let it rest 30 minutes. Do a set of folds then rest 30 minutes. Place dough in oiled up pan, dimple and rest 30 minutes. Add tomato sauce and spread it plus dimple on the whole focaccia surface. Add mozzarella, oregano and olive oil drizzle. Bake at 360 for 40 minutes! Enjoy!
