PESTO 🌿
Prepare to be amazed at how easy pesto really is to make! You’ll also be surprised at how much tastier it is than most store-bought pesto.
INGREDIENTS:
3 cups basil leaves
1⁄4 cup cashew nuts
zest of 1 lemon
3 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, crushed salt and pepper to taste
METHOD:
• Put all the ingredients into a food processer and blitz until smooth and creamy.
• Serve chilled. Store in refrigerator for up to 1 week.
Makes: half a cup
