posting in this sub is my new favorite thing ๐Ÿ™‚

here are the details:

  • 1/4 cup jasmine rice, cooked and then tossed with cilantro and lime juice
  • 4 oz boneless skinless chicken breast, cubed and cooked with taco seasoning
  • zucchini, red bell pepper, red onion and cilantro, finely chopped and tossed with lime juice, 1 tsp olive oil, chili powder and cumin
  • the esquites recipe from isabeleats.com, but with 3 Tbsp light mayo instead of the 1/4 cup regular mayo stated in the recipe
  • 1 oz avocado

a little more chopping than i would have liked but honestly it was worth it because now i have leftovers. and it was so good!

    This is similar to my emergency dinner. Throw some sort of protein on a sheet pan (or microwave some Aldiโ€™s shelf stable vegan taco meat OMG good! But also if Iโ€™m this emergency mode, Iโ€™m using a pouch of Spanish rice. Itโ€™s enough for 4 of us) slice peppers, onions, tomatoesโ€ฆwhatever veg you have, throw down some beans and corn too. Hit with oil spray (I have a misto) Season paprika, cumin, garlic, S&P, chili powder etc. Cook in the oven 375 or something? 20 minutes maybe? โ€ฆUntil done.

    When you add lots of veg, and some beans, and a bit of meat, the little bit of rice just works. I also make a sauce of some variant of salsa, light sour cream, and hot sauce. Iโ€™ve also topped with chopped cabbage/lettuce/spinach at the end. Avocado. Etc. to bulk it up. I usually get them about 3-400 cal.

    I am Basically addicted. And you can change the spices with the veg you have laying around – perfect – low cal but crazy filling
