I caught this salmon one week ago and when it was fresh a couple of my Brazilian coworkers ate it as sashimi while I cut up most of it and vacuum packed it just wondering if it would be still safe to consume after thawing out in the fridge?

    No idea I always hear people saying you gotta flash freeze for parasites but I be seeing people eat raw fish straight out the water all the time

    … wild caught I would totally freeze sub zero before eating raw. Wild salmon is one of the only fish I have seen visible worms while filleting I have no problem eating them but they shouldn’t be alive.

    You cannot eat wild salmon fresh without flash freezing.

    Well, you can, you’ll just get parasites. I assume your coworkers know this and froze it though.

    Farm raised fish have little to no parasites because we maintain what they eat. Wild salmon could have parasites/eggs. You’ll probably live and whatnot. But you might get some extra protein. I’d do some more research. Pulling worms out should be doable but idk if you’d be able to find eggs. Maybe this guy is clean as a whistle. You’ll figure it out.
