It's been months since I last smoked something since I've been on a chicken grilling spree, but damn I do miss it. But more specifically beef ribs, just so easy and fast.
It's less worrisome than brisket in my experience too.

Beef ribs are king imo. Yes, brisket is good, but Dino ribs / plate ribs are just brisket on a bone, and i feel the bone adds flavor.
I am also partial to meaty beef back ribs. Hard to find good ones that aren’t just bones with a small scrap of meat, but if you find good meat ones, they are superb. Truly what pork ribs wish they could be.

Nice work. I’ve not used my vac seal, sous vide yet but those ribs look 100% and $100, cash money! When I test it out I will plan to smoke then sous vide. Since you appear to be an expert with beef ribs, I’d like to see your finished Bone-In Beef Short Plate Ribs if you ever cook them. Ribs are much more difficult to cook than prime rib for me and they are much more expensive. You nailed it!

Beef ribs are better but it depends on the cut. Some stores charge premium but sell crap with very little meat on the bone.. choose wisely 😆

Beef ribs are so much easier to cook for a solo person like myself – hard to cook a brisket for yourself … like doable haha but I always tend to go ribs
