You’ll start by slicing the pa into triangles and tossing with olive oil and spices and baking until golden and crisp. If you’re making a salad ahead, I recommend salting the cucumbers to help draw out moisture, but otherwise you can skip this step. This salad has all of the classic taziki contenders like yogurt, fresh herbs, garlic, and lemon, plus a couple extra flavor boosters like chives and capers. You’ll combine the yogurt mixture with some partially mashed chickpeas, una, and those cucumbers. Top with some pickled red onion, extra fresh herbs, and a drizzle of olive oil.
