This easy vegetable pasta sauce is loaded with 5 different kinds of vegetables and comes together in 30 minutes.

This recipe is great when it comes to using up your leftover veggies and getting some healthy veggies into your kids meals. It is also a great recipe for fussy eaters!
Ingredients:
3 tomatoes
1 bell pepper
1 big onion, roughly chopped
2 carrots, roughly chopped
2 zucchinis, roughly sliced
1 Tbsp cream cheese (heaped)
Handful of cashews
1 packet of pasta
How to make:
1. Preheat the oven to 200°C (180°C fan forced) and line a baking tray with parchment paper.
2. Place the tomatoes, bell pepper, zucchinis, carrots, and onion on the prepared baking sheet.
3. Drizzle with olive oil. Sprinkle with salt and pepper.
4. Roast the vegetables for 30 to 40 minutes or until they are tender.
5. Meanwhile, cook the pasta, drain and set aside.
6. When the vegetables are ready. Transfer into a blender, add the cashews and cream cheese and blend until smooth.
7. Add the veggie sauce on top of your pasta, mix and enjoy this delicious loaded veggie pasta!
