For the Dough:
- (115g) vegan unsalted butter, melted
- (112g) brown sugar
- 3 tablespoons sugar
- 1 egg (bobs redmill egg replacement)
- 1/2 teaspoon vanilla extract
- (167g) all-purpose flour (sifted)
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
For the Filling:
- one caramel candy (smart sweets) or your choice of caramel filling
