Looking for something to consistenly make super fine minced white onions like you get at a ballpark or Costco. All I'm finding online are either slap-chop plastic crap or commercial monstrosities.

Use the pulse setting on a food processor. You can do a lot at once and freeze in ice cube trays for easy future access

I use a food processor..cheap and easy. I just pulse it till the onions are the consistency/size I want.

You can use a cheese grater in a pinch, but you may want to cut the onion in half and grate the freshly cut face for best results.

Not sure if it’s exactly what you mean, but you can get dehydrated onions and rehydrate them with water and they are the same as the ones they use on McDonald’s hamburgers 😁

a really sharp knife, like, the sharpest you can get, or a mandoline
Anything that you use will be more of a hassle than a knife. Especially in small quantities.
Food processors give you a slushy texture, which might be okay, depending on what you like.
