Your butcher put a different type of meat in that bag before the ham. His meat.

How long has it been unrefrigerated and was the vacuum sealed?

This looks like it’s been wet with oxygen for a while.

    The Maillard is really Maillarding.

    Or

    The Pellicle is really Pellicle-ing.

  4. That’s a sure sign of spoilage. Idk exactly what that sticky stuff is when it happens. Maybe some type of bacterial mat or waste?

  5. What does it smell like? If it’s foul, might be alike from anaerobic bacteria?

Words you don’t want in your meat: mucilaginous, yeasty, infected, oozing, slime-coated. Take it to a doctor!

main issue is it appears someone used it as a fleshlight
