It works great for sushi and has a wonderful flavor. If you cure it with beets you can even get a neat two-tone color on it. The white fish is not homemade, just some hamachi I pulled out of the freezer.

    Looks fire! I was just thinking that I hadn’t seen anyone use Steelhead Trout for sushi before, and lo and behold here it is!! I’m also living in WNC right now, so I’d love to try your food truck once you get it open 🙂
