How do you make kasar sichilana? Have you ever wondered how to create the delightful casada sichilana? This traditional Italian dessert is a true gem, especially during Easter celebrations. Let’s walk through the steps to make this delicious treat that embodies Italian traditions and customs. First, we begin with the sponge cake. You will need six eggs, 1 cup of sugar, 1 cup of cake flour, 1/4 cup of potato starch, the zest of one orange, one teaspoon of vanilla extract, and a pinch of salt. Beat the eggs with the sugar until the mixture is light and fluffy. Then, gently fold in the flour and potato starch. Pour the batter into a greased and fled pan and bake it in a preheated oven at 350° F until it turns golden brown. This usually takes about 20 to 25 minutes. Next, let’s prepare the ricotta filling. Take one pound of ricotta cheese and drain it overnight to remove any excess moisture. This step is vital to ensure your cake does not become soggy. Once drained, mix the ricotta with one cup of sugar, one teaspoon of vanilla extract, half a cup of dark chocolate chips, 1/4 cup of candied orange squares, and a pinch of cinnamon. This mixture will add a rich flavor to your cake. Now, let’s make the martzipan. You will need two cups of ground almonds and two cups of powdered sugar. Combine these with two tablespoons of honey and a little water until you achieve a smooth dough. For a traditional look, add a few drops of green food coloring. Roll out the martzipan to about 4 millime thick. It’s time to assemble your casada sichilana. Dust a cake pan with powdered sugar and line it with the rolled out martzipan, ensuring it sticks well. Place a layer of sponge cake at the bottom of the pan and brush it with a mixture of rum and water. Spread the ricotta filling over the cake. Then add another layer of sponge cake on top, brushing it with the remaining rum syrup. For the finishing touches, cover the entire cake with martzipan and smooth it out. To create a glaze, mix one cup of powdered sugar with one egg white and a few drops of lemon juice. Pour this glaze over the cake and then decorate with candied fruits for a festive look. Let your casada sichilana rest in the refrigerator for at least 1 hour before serving. This dessert is not only a treat for the taste buds, but also a beautiful centerpiece for your Easter table. Enjoy this delightful creation that reflects the rich Italian traditions and customs during the Easter season.
