INGREDIENTS:

Roasted Veggies:
– 1 lb fresh tomatoes (In the video, I showed 6 tomatoes, but I only ended up using 3, which was about 1 lb)
– 2 red bell peppers
– 2 jalapeno peppers
– 1 onion
– 2 whole garlic bulbs
– Large handful of fresh basil
– Olive oil
– Italian seasoning
– Salt & pepper

Seasonings:
– 1/2 tsp sugar, add more if needed
– 1 tsp paprika
– 1 tbsp balsamic glaze
– 2 tbsp sour cream
– 1 chicken stock cube
– Salt & pepper, to taste

INSTRUCTIONS:
1️⃣ Add everything under “Roasted Veggies” into an appropriately sized oven safe dish and bake at 400°F for 50 minutes.

2️⃣ Blend the roasted veggies until smooth and then pour into a pan.

3️⃣ Add all seasonings and simmer for 10 minutes. Top your soup with cheese, sour cream, and fresh basil. Serve it alongside garlic bread or even a grilled cheese sandwich. Enjoy!
