Beyond Tuscan White Bean and Kale Skillet
Making a delicious white bean and kale skillet using beyond meats new chicken pieces! This was super addicting!
Ingredients
1 14.5oz can of cannellini beans, drained
2 tbsps minced garlic
2-3 cups broth
8oz jar julienned sundried tomatoes in oil
10oz Beyond Chicken Pieces (unbreaded)
Salt
Garlic pepper
2-3 cups chopped kale leaves
3/4 cup shredded vegan mozzarella
Fresh parsley or basil for garnish
Parmesan for garnish
Olive oil
Directions
Heat a non stick skillet over medium high heat
Add in your beyond chicken pieces
Toss to coat
Add in roughly 1/4-1/3 cup broth
Mix well
Cover and cook 2 minutes
Remove cover and toss
Return cover for 2 more minutes
Remove cover
Add in your garlic
Remove tomatoes from jar and add to pan
Season with salt and garlic pepper
Mix well and cook for 2-3 minutes
Add in your drained beans and 1/2 cup broth
Mix well
Cook 3-5 minutes
Add in your kale
Mix well
Add in another 1/4-1/2 cup broth
Mix
Add in your mozzarella and mix well
Cook until cheese has melted
Remove from heat
Garnish with Parmesan and parsley/basil
Serve with toasted bread or over pasta/rice
