Tsoureki – Sweet and Soft Easter Bread without mixer
Authentic greek tsoureki a soft, sweet and aromatic braided bread traditionally enjoyed during Easter.This fluffy, slightly citrusy bread is flavored with mahlepi (mahleb) & mastic and topped with sesame or almonds. Perfect for sharing with family!
INGREDIENTS:
– 40 g of water
– 8 g of instant yeast/ 25 g yeast
– 40 g of flour (13% proteins)
– 1 tsp of sugar

– 2 eggs
– a pinch of salt
– 90 g of sugar
– 1 tbsp of lemon juice (optional)
– 2 g of mastic gum
– 2 g of mahlepi
If you don’t have mahlepi and mastic gum you can use vanilla
– 2 g of cardamom
– 100 g of yoghurt
– lemon and orarange zest
– 400 g of flour (13% proteins)
– 50 g of butter
– 50 g of sliced almonds
💬 TIPS:
✔ Use fresh yeast for best texture.
✔ Replace mahlepi with vanilla if unavailable.
✔ Store in an airtight container for up to 5 days.
