When I was in Tokyo I had the best ramen in my entire life. I couldn’t find an exact recipe, but what I found was a dish description that I hope some masterful chef might be able to decipher into an actual recipe. There are ingredients they list that are local to Japan and I live on the east coast of the US.

Any help would be greatly appreciated! And you’ll have this amazing recipe to try as well!!

I visited Uzu in Kyoto and had a Sichuan Tsukemen Ramen. Probably the best eating experience of my life.

This sounds delicious. This broth isn’t too different than many vegan ramen recipes I’ve seen. Check out the serious eats vegan ramen recipe. other than oat milk, it has most of the broth components listed here. It’s a lot of labor (as most good ramen broths will be) but it’s absolutely delicious.

  3. I’m assuming they use vegan white miso paste. I believe Wegmans carries it.

Did you know there is a vegan ramen subreddit? Maybe they can help 🙂
