Tried the regular gatorsauce at firehouse subs and loved it. So I went to buy it online and came across their spicier version and it has become my new go to. Love sauces with pepper mash

Gator Sauce is good stuff. I’ve tried multiple varieties of their sauces and they’re all tasty. I love how much black pepper there is.
Pepper Mash in an ingredients list is often a sign that they’re buying a premade mash product instead of growing their own peppers. In some cases they are and are fermenting themselves but in those cases they’ll usually advertise that fact or list it in the ingredients that way.
There’s probably nothing inherently wrong with buying a premade mash product and using it in a sauce but it does feel like a shortcut at the same time.
