Broccoli Rabe & Sausage with Orecchiette
2 Bunches of Broccoli Rabe – blanched
1/3 C Olive Oil
5 – 6 Cloves Garlic – minced
1 lb Italian Sausage – casing removed
1/2 tsp Red Pepper Flakes
1 C Reserved Broccoli Rabe Water
1 lb Orecchiette Pasta
*Optional: top with grated cheese
Cook orecchiette al dente according to package directions
To blanch broccoli rabe:
Cut off approx 1″ off the bottoms. Place broccoli rabe in a pot of boiling water,
cooking for approx 7 minutes. Drain & place in an ice bath to stop the cooking.
Roughly chop and set aside
**Reserve 1 cup of water
In a large skillet, brown your sausage. Remove from pan and set aside. Add olive oil to
pan and add garlic, cook until fragrant 2 – 3 minutes. Add the chopped broccoli rabe and red
pepper flakes. Add reserved water & season with salt & pepper.
Sauté for a few minutes then add the sausage & pasta back into the pan, stir until combined.
Top with grated cheese.
