So, my philipino cook fried german Bockwurst in butter, placed them on a bed of raw apples and raw white cabbage and topped everything with ketchup and tartar sauce. I'm two days on board, what could I possibly have done to offend him like this?

I guess these aren’t Bockwürste, but rather Wiener Würstchen. Imo Bockwürste are thicker (those are used for Currywurst).

The Philippines are one of those countries where, unless you live and work in the tourist areas, then you live in 3rd world conditions. If you add that to the possibility of a company guideline stating that the crew gets served whatever is in excess, then you have a chef that is very efficient and creative with what they have access to. Also, you may want to get an idea of what was being served to the previous captain. Or if your file has dietary restrictions either placed by you or by someone else. You’re captaining a cruise, better to rule out positive reasoning before adopting negative ones, I mean, once you leave port, that can really boil up.
Get rid of him straight away and refer him for urgent medical attention as this ain’t fucking normal!
