This traditional Greek recipe takes simple ingredients and gives it an upgrade with a delicious stuffing of onion, garlic, tomatoes, oregano and herbs and creates a party of flavors in your mouth by combining equal sized sardines and stuffing them! ⚫️ ingredients:
– 2lb sardines
– finely chopped onions or scallions
– finely chopped garlic
– tomato slices
– chopped parsley
– salt and pepper
– oregano
– extra virgin olive oil
– lemon juice
⚫️ instructions:
– clean the sardines by removing the head and the bone and creating butterfly look, make a bed of sardines in a skillet and add salt, pepper, oregano, the chopped onions, garlic parsley and 1 tomato slice to each sardine, and then cover with the rest of sardines ( match 2 sardines with stuffing in between), add plenty of olive oil and bake for 15-20 mins at 400F (200C), when are ready garnish with parsley and lemon juice and enjoy with fava or skordalia and a good glass or ouzo!
