My first time ever seeing Native American cuisine in this way, and it was incredible! Arizona doesn’t have a Michelin guide, but I’m pretty confident in saying it’s in now my top 3 in the state, and would likely get awarded 1 star if reviewed. It’s located on the Gila River Indian Reservation, and heavily features local native art, ingredients, and even some language. The experience and service were great, and the food was delicious as well. After the meal, when I told the chef it might be my new favorite restaurant in Arizona, he said that his favorite is still Taco Bell. Respect.

Some of my favorite dishes:

Bread (4): so so good. I don’t even know how to describe it, but perfect temperature, textures, and flavor with the thyme butter

Squab (5): my favorite dish of the meal. Absolutely divine flavor. I was gnawing on the bone like a caveman in hopes of just one more taste of heaven.

Venison (8): very creative use of chocolate, vanilla and currants in a savory dish.

Bison (9): while the tenderloin was standard, the corn purée it sad on was impressively complex and subtle. It felt comparable to trying real truffle or wasabi for the first time.

Fry bread (10): wow, I’ve had a good amount of fry bread and this was exceptional. Such a great light crisp, didn’t feel heavy or oily, and went perfectly with the cheese.

As a final touch, picking up the car from the valet they left a handwritten thank you letter addressed to us, a custom candle, and some glass acqua panna waters!

    It is highly rated by la liste. They include it in one of their top 1000 restaurants. If you ever stay at the resort, breakfast in the morning is among the best you’ll ever have. Although it is under a different name, ko’sin, the atmosphere could not be more peaceful.
