Here’s an easy recipe for your summer days.
Just make yourself the perfect dip in 20 minutes whilst you could also add a delicious Greek salad to accompany your meal.
Cooking couldn’t be simpler, the easy peasy way!
‘Spicy feta, yogurt and hot chili dip’
Serves: 3-4 persons
Ingredients:
200 gr full fat Greek yogurt
200 gr Greek feta
1 roasted red pepper
Chilli flakes
1 clove crushed garlic
Instructions:
1. Rub the pepper with a little olive oil. Roast in hot oven or on the grill until skin is charred.
Leave the pepper to cool . Then peel of the charred skin.
2. Roughly chop the pepper into small pieces.
3. In a bowl mix the yogurt, crumbled feta, roasted pepper, chilli flakes, splash of red wine vinegar, few grinds of black pepper and one clove of crushed garlic.
4. Mix everything together into a slightly lumpy texture. (Tip – Don’t over mix.it will become pink:).
5. Serve in a nice dish. Drizzle olive oil, add some chilli flakes and some fresh dill.
Pour yourself a nice glass of white wine and enjoy!
Calimera. Today we are going to be making tiro cafiri, a beautiful Greek mezzi dish made from yogurt, feta cheese and spice with red chili. Okay. So take your red pepper, little bit of olive oil on it, little sprinkle of salt. Then we’re going to simply put that in a really hot oven or on the grill. This is what the red pepper looks like after 20 minutes in the oven. Now we’re going to leave it to cool down for 10 minutes. You just peel off the skin of the pepper and remove the seeds like that. The skin will come off easily. Okay. Now, so just chop your pepper through. Go through one way like that. Turn it with a knife a little bit and then just go the other way. Rustic cookie. Look at that. So you need 200 g around the beautiful Greek yogurt. Feta cheese crumbled with your hands. Beautiful like that. Around one clove of garlic, finely chopped. Red chili for the heat. Finely a roasted red pepper. Few drops of red rice vinegar. A little bit of black pepper. Greek’s favorite olive oil. Just mix it up till all the ingredients are combined to make a nice salad. The yogurt is going to lighten the salad. Now just drizzle on the top some beautiful Greek olive oil. And I like to put a little bit of deal on the top to get another contrast and another flavor. That’s it. All you need is a nice crusty bread.
