Like many I’ve been baking sourdough since the pandemic. I’ve lurked and learned here for a while and wanted to share my progress. I made 4 loaves today to share with friends and “pay” for some plant starts.
Recipe: 1250 g flour (1000:250 for whole wheat loaves) 875g water 15g salt 135 g starter (1:1:1)
Autolyse flour water and salt for 2 hours. Add starter and mix. 5 sets of stretch and folds every 30 mins. Bulk ferment ~6 hours (until sample jar ~doubled). Divide into loaves and counter rest 30 mins. Shape. Cold proof in fridge 12 hours.
Preheat oven to 450 with cast iron Dutch oven in (baking sheet on rack beneath to help dissipate heat and avoid crunch bottom). Score loaves. Bake 20 mins covered, 20 uncovered, remove from Dutch oven and finish on rack for 10 minutes no vessel.
Cool on countertop on wire rack until completely cool. Cut.
Note loaves on the left (pic 1) are 20% whole wheat flour. Other loaves are 100% BF.
King Arthur bread flour or whole wheat flour.
