I decided today would be a great day for a picnic, but the weather had other ideas!

The only advance prep I needed to do, was to cook the quinoa in some veggie stock with a pinch of turmeric and a stick of lemongrass. This turns this little seed into tiny pockets of flavour, crunchy and delicious.

I like playing around with different styles of video for my food content. I really enjoy sharing my meals with you, but food videos appear to be less popular on Instagram, I’m not sure why.

Yesterday someone asked how I can survive between 2pm and 8am the following morning without food. The answer is simple, eating fibre rich, nutrient dense food like this will keep my belly happy and feeling full.

The pomegranate molasses, pineapple and strawberries give the salad some sweetness, so I’m not craving something sugary after my meal.

If you haven’t tried Makdous, go grab yourself a jar from your local Middle Eastern store. I buy mine from ‘Ismael’ in Ayamonte. It’s owned by a lovely couple from Morocco, and it’s full of amazing Middle Eastern goodies!

I started eating plants only 12 years ago and haven’t looked back. I really enjoy playing with flavour combinations and textures. I’m just here to encourage you to add more veg to your plate.

Do you like quinoa? It’s a great alternative to rice and has more protein.

Thanks for stopping by, have a beautiful day.

Well, we made it here in one piece. It’s forecast to be sunny today and a little bit windy, but it’s so stormy. I’m having a picnic. Stormy weather or not. Do you like picnics? I love picnics. My husband has. I think it’s all the sand. I’ve got you hidden in my bag. We’re going to have to make a run for it because it’s really, really windy and I think the sand is going in the girls’s eyes. Thank you all for coming with me to the beach for a windswept picnic. It did not quite go to plan. I ended up with sand in my pickles.
