The stars of this creation are definitely the feta and eggs, which, when combined in the hot pan, create a mouthwatering combo that’s sure to make your taste buds dance with joy. I’m especially hooked on the crispy, cheesy edges the feta creates around the drippy sunny side egg. And when it’s done cooking, I layer the twosome on a whole-grain tortilla with creamy hummus and fresh leafy greens for extra nutrition. This wrap is simple, irresistible, a little messy to eat (lol) and I can’t get enough of it!

Mist a skillet with oil spray and warm over medium-high heat. Add your crumbled feta around the pan in a circular shape.

Crack your egg in the center of the feta circle, season with salt, pepper, and optional red pepper flakes, and allow it to cook until the egg white is cooked through (no longer clear) and the yolk is partially set but still soft.

To build your wrap, spread the hummus on the tortilla and layer on leafy greens. Top with the feta-fried egg and fold it in half. Slice in two pieces and dig in!
