Lazy girl lunch on a Thursday! A jar of tuna seasoned with herbs de provence mixed with half of a sad looking avocado. To this I added a few tablespoons of diced red onion, a spoonful of mayo, a little Dijon mustard, fresh lemon juice, a tablespoon of fresh dill, salt and pepper.

Stir it well, add some drained canned white beans, then spoon on top of seasoned tomato slices. Quick, simple, high protein, and utterly delicious!

Here’s my lazy but very delicious lunch of 
tuna, white beans, and tomatoes. You always want   to season the tomatoes in advance. This will help 
to enhance their flavor. Next, I combined a jar of   tuna seasoned with herbs de provence with half 
of a sad looking avocado that was needing to   be used up. To give it a bit more flavor I added 
a spoonful of mayo, a little Dijon mustard, fresh   lemon juice, some minced red onion, fresh dill,
salt and pepper. Stir this really well and then   add in some canned white beans. Give it a final 
taste, adjust the seasoning if you want, and then   spoon it right on on top of those seasoned tomato 
slices. Quick, simple high protein and super yummy.
