Hey y’all. Welcome back to my kitchen. Let’s make pineapple upside down cupcakes. Y’all are going to love it. Let me show you how. Okay, first thing I like to make them in an actual muffin tin instead of cupcake tins. That way they’ve got a good size to them. I’ve already sprayed this with some oil. And guys, I found this. You can do regular yellow cake mix or you can get this perfectly moist pineapple supreme which is delicious. So, we’re just going to follow the directions exactly how they say on this box and you can do with that what you will. I am 100% uh a fan of a box cake mix. They save you so much time, effort, measuring, and trouble. Okay, so then we’re going to put that in the box. Now, look, I’m organized for this one today. So, this is half cup of oil. That’s what the box says, one cup of water, three eggs, one boop. Two. Oh, no. No. No. No. That’s another sh. Oh lord. Hold on. Pause. I got it. Ah, I got it. I found it. Okay. Yes. Two. Three eggs. Three. Okay. Now, I’ll be right back. Let me wash my hands. All right. So, now we’re just going to mix this up in this pretty bowl. Is this pretty? This used to belong to Anthony’s grandmother. So, now it is mine. and I love it. So, we’re going to mix this up real good like this. We can use a hand mixer here, but I didn’t want to get all that out and everything, so I’m doing it this way. Hang on a second. Okay, so now here comes the part where we make it upside down. Okay, so uh what we need to do is you need to have pineapple, you need to have cherries, and you need to have brown sugar. Get those things together. Okay. Okay. Now, in each little muffin hole, you’re going to put about a tablespoon or whatever you want to do. Just put you some brown sugar in there. Okay. It makes it good. I know sugar’s bad. Sugar is bad for us. I’m not going to eat these anyway. So now, next step, get you some pineapple rings. Oh, that’s crushed pineapple. That’s for another recipe. Hang on. Pineapple ring. And we’re going to take and put one in the bottom of each little cup here. Little muffin hole. Like this. You may have to press them in there a little bit. It’ll be okay. Press them in there like this right here. Okay. Uh oh. Now we’re going crazy there. Okay. Now, let’s do just a little bit of the juice so it can mix up with that sugar. Make it real good like this. Okay. Now, we’re going to take our cherries and we’re going to stick a cherry in each little opening like that. It’s going to be so pretty. There’s a real satisfaction moment here in a little bit when we take these out of the oven, we flip them upside down and they all come out right. It’s very satisfying and I’m hoping that we that we get that moment we did last time. Let’s see if we could repeat it again. Okay, everyone’s got cherry. Okay, now we got to put our batter in on top of this. So, this one’s going to spout. So, that’s good. So, now we’re going to go. We’re going to add our batter to each one. Okay, I’m not good at this. I’m not a big cake baker, so I usually make a big mess. But we’re going to try our best. Okay. Oh, Lord. Okay. Slow honey. It’s enough. Oopsie. That’s enough. Last one. Okay. Now, pop that off right there. Okay. We’re going to pop these in a 350°ree oven and they’ll stay in there until the cake is set. Probably according to the box about um 15 minutes, I think. All right, let’s get them in the oven. See what they do. Okay, welcome back. Timer just went off. Let’s see if we have done cupcakes or not. I said for 15. They look nice and golden. Let’s take a look. See what we got. Lord. Okay, now these are definitely good to go. Okay, we’re going to let these cool and then we’re going to flip them and see what we got. Okay, y’all. Here it is. Moment of truth. I’ll let these things cool for a little bit. We’re going to flip it over and see if we have beautiful upside down pineapple upside down cupcakes. All right, here we go, guys. So, what you want to do is just take this. We’re going to get our hands in position. We got parchment paper down. We’re going to flip. We’re going to pray. Let’s do it. Okay, here we go. Oh, no. Okay. Okay. Okay. We’ve got got three. We’ve got three. Okay. Let’s get these three out of the way and then we’ll try the others. All right. We got these last three. So, let’s give them a little drop it like they’re hot. Oh, come on. There we go. We got two more. They’re coming out. Oh, lordy. Let’s see if we get this last one. Be right back.
