Look up your variety of pea and have a look at how expanded the shells are when ripe.

You want to start watching them closely now, and pick when the peas are nicely round and the pod is green and shiny…if the peas inside get a little too big or the pod starts to lose the shine, get them right away, as its just past thr ‘perfect’ window. Still edible!
It takes a little practice to start seeing/recognizing the subtle changes and learn when they are just right, but once you get it, your intuition will kick in.

Earlier the better except they’re small. It’s a balance between tenderness and size. I try a pick just before they are whatever seems like it is going to be full size for the year.
Between thumb and finger length works as a rule of thumb for me.

Can you post pics of how you have them supported i have some young ones and i have no idea how i should . looks like a bamboo post

Either pick and eat whole when they are small and still flat, or wait until they bulge and then shell them for the peas inside. If you pick them in between, the pods will be fibrous, or the peas underdeveloped.

When you can feel the beans inside, whereas snow peas should be flat.

Sugar peas are edible at any point and the more you pick the more they grow. Harvest often and on the side of early and you’ll get more and more each time. I usually pick a few hand fulls every 2-3 days

Honestly, once the peas get round I taste one every day until they stop being starchy and start being sweet!
