  1. No wrap is the only way I do ribs these days. Used to be a fan of 321 method, but honestly, its just easier and more flavorful with no wrap.

    Only way to go. I have been brushing with ghee (massive tub from Costco for $30) in the last hour of cooking.

    Y’all have me convinced to do no wrap on my next set of ribs… I see the metal tray underneath, is that just for catching the drippings or do you like to add some water to steam it a little to imitate the wrap?

    Awesome job! I refuse to wrap anything myself. Part of smoking for me is the bark and wrapping ruins it.

    I cover about 2 inches on each end with foil for a while in the middle of the cook time or the ends turn out like dry jerky. Is there some other way to avoid that?

    I have baby backs going on my camp chef right now, not gonna wrap. I’m test driving pecan lumberjack pellets, I usually use their hickory

    I like both ways. With babybacks I smoke for 3 hours and wrap in a bunch of sauce for 1.5ish.
