    Wouldn’t many smaller trays or platters be better?

    You have a 1000 people leaning towards and breathing over the food. Skin particles and hair fall off people and end up in the food. Someone sneezes or coughs. This is a germ table.

    I did some party catering when we had our deli’s and the largest tray we did was 24inch. It’s manageable like that.

    People who say we need GMO because of food shortage have not worked in restaurants and places that serve this.
