  2. Start it at 11pm at 200 and have the hopper full. In the morning 7am wrap it and up the temp to 250. Once it hits 205 internal. Pull it and let it rest in a cooler for an hour as you get the sides ready. You will have a nice dinner.

    I suggest getting a better heat probe as the built in one for me has never been accurate
