Caramel Kheer – Summer Special Meetha
Try this unique twist to traditional kheer with a rich caramel flavour! Perfect for summer – serve chilled and enjoy the creamy delight.

Ingredients:
• 1/2 cup rice
• 1 litre full cream milk
• Mixed nuts (almonds, cashews, pistachios)
• 1 tbsp ghee
• 1 tsp cardamom powder
• 1 cup sugar
• 2 tbsp water (for caramel)

Method:
1. Wash rice thoroughly, soak for 15–20 mins.
2. Boil milk in a heavy-bottomed pan.
3. Roast chopped nuts in ghee and keep aside.
4. Add soaked rice to boiling milk, simmer on low flame for 20–25 mins.
5. Stir continuously until rice is cooked. Add cardamom powder and roasted nuts.
6. For caramel sauce: heat 1 cup sugar with 2 tbsp water in a pan. Let it caramelize until golden. Slowly add a little water, stir well to form a sauce.
7. Add caramel sauce to kheer, mix well.
8. Let it cool and refrigerate. Serve chilled!
