Mini Apple Pies Recipe

INGREDIENTS :
PIE DOUGH INGREDIENTS :
125 g all-purpose flour
20 g granulated sugar
1/2 cup salted butter ( very cold & cubed )
4-5 tsp ice water

Apple Pie Filling Ingredients :
2 medium apples
56 g brown sugar
1.5 tsp water
1 tsp butter
1/2 tsp cinnamon
1/2 tsp nutmeg
1 1/2 tsp cornstarch
1 tsp water

INSTRUCTIONS : Pie Dough
➡️ Place flour, sugar and cubed butter into food processor with metal blade attachment. Quick pulse until butter is broken up into pieces no bigger than the size of peas.
➡️ Slowly begin to add 1tbsp ice water into the food process. Pulsing between each tbsp until mixture beings to come together stopping before it forms a complete ball. Some crumbs are okay.
➡️ Turn dough out onto a clean surface and form into a disk. Cover in plastic wrap and chill in the fridge for the last 30 min. In the mean time make the pie filling.

Apple Pie Filling Instructions :
➡️ Peel, core and chop apples. Melt butter, nutmeg and cinnamon over medium heat. Mix in apples, sugar and water.
➡️Cover and cook stirring occasionally for until slightly softened.
➡️ Combine cornstarch and 1 tsp water. Add to the pan while stirring and continue to cook until apples are soft and filling is thickened.

Assemble Mini Pies :
➡️ Preheat the oven to 425° F.
➡️ Roll out the dough until it is 1/4 inch thick, using a cup or cookie cutter cut out 6-8 circles. Place each circle in a muffin tin cup.
➡️ Divide the pie filling mixture among the Muffin tins. Top each pie with a woven lattice.
➡️ Bake the pie until they are golden brown, 16-18 mins.
➡️ Remove the pies from the oven and let them cool completely in the Muffin tin.
