Made a big pot with 4 servings at 256 calories/23.5g protein/36g fiber each! Here's me holding a Pyrex bowl at a few different angles to give you an accurate visual.

Recipe:

1 box (12oz dry) Carbe Diem elbows — 660

Sauce:

1 cup lowfat Good Culture cottage cheese — 160

1/2 cup Carbmaster nonfat ultrafiltere milk — 30

28g fat free shredded cheddar — 45

4 tbsp (32g) Hoosier Farm cheddar powder — 120

1 tsp cornstarch — 10

Seasoned with salt, pepper, garlic powder, a squirt of sriracha, and 5 drops of butter flavour extract.


I cooked the box of pasta in salted water for about 25 minutes, blended the sauce ingredients in my ninja, drained the pasta (do not rinse!), and poured the sauce in. Super easy and does NOT taste low calorie at all. I'm going to the store right now for some green chiles and turkey hot dogs to chop up and mix in for the ultimate comfort meal.

    Edit: the reason there are two different cheddar powders listed on the MFP ingredients is that I couldn’t find the exact brand I have (which is 30cal per 8g tbsp) so I entered 2 tbsps of one listed at 35 and 2 tbsps of one listed at 25 so it’d even out in the total🙃
