Gloomy day outside, but warmth and comfort in the kitchen. Just baked a delicious malva pudding to brighten up the day.
Ingredients
Sponge
3 medium eggs/2 large eggs
2 tablespoons margarine
2 tablespoons Apricot jam
1 cup brown sugar
2 teaspoons vanilla essence
1 cup milk
2 cups cake flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
½ teaspoon salt
Sauce
½ cup brown sugar
1 cup milk
1 tablespoon margarine

Preheat your oven to 160°C.
Lightly grease your baking pan(I used a muffin pan).
In a bowl, mix together eggs, margarine, jam, vanilla, sugar & milk.
Sift flour, baking powder, bicarbonate of soda and salt.
Combine the flour mixture into the egg mixture and whisk until smooth.
Transfer the batter to the baking prepared pan.
Bake for 30 minutes at 160°C.
Sauce
Pour sauce ingredients in a small pot. Stir over low heat to dissolve the sugar. Bring to the boil and simmer for 5-10 minutes.
Poke the hot sponge with a fork as soon as it comes out of the oven. Pour hot sauce over and allow to absorb.
Serve with Custard or Ice cream
