This looks fantastic, OP. As someone from Santa Maria, CA, this looks pretty spot on to how I make mine.

I’ve never cooked a tri-tip this way, but I’m thinking I might grab a couple (or 3) and do this…that looks fan-TAS-tic! Maybe cook one like brisket, and the other two the conventional way to test it out?
