Or is this a case of steatosis? For reference, bought this morning from Lidl in Romania at 10 EUR for 420 grams. I will of course cook it and share my impressions tomorrow 😀

    Not steatosis, marbling is truly remarkable, spinalis is dramatically elongated like it happens with bisons primal steaks.

    Looks beautiful. I am Korean and in my country the size of spinalis muscle (In Korea, we call it shrimp flesh, cuz it looks like a shrimp) is a clear indicator if the meet is good or not.

    In the pic, right side is fully covered with the shrimp flesh, which means very expensive and nice cut. 👍🏻

    From what I’ve seen. With Steotosis you get cloudy white areas instead of distinct white fat speckled in with red meat. This looks amazing.
