The recent post about chives gave me a flashback to this old flash game, The Impossible Quiz which asserted that shallots are the square root of an onion.

Onions, garlic, shallots, green onions, chives, leeks; all good imho. Like I usually always have all of them on hand except leeks and chives, but I do stock up on red onion too. Actually just got some leeks the other day and think I’m gonna throw some into some zuppa toscana later, and then maybe a potato leek soup, and then just braise the rest of them, but I digress.
Shallots are great. They’re like a more delicate red onion, so I like tossing them into cold salads like tuna salad, potato salad, pasta salad, or whatever and also like pairing them with seafood, so like if I’m sauteing some shrimp or salmon or something with garlic, lemon, and some capers, but I’ve thrown them on salads too and used them as emergency onion substitutes for most things, so imho the more alliums the better; I don’t discriminate.
Oh, they also work on sandwiches too, can verify.
