I’ve been in this business a long time. Any piece of equipment I buy, I always look for the basic models. All the electronic stuff is only going to be a headache down the road. Give me a convection oven with an on/off switch and a temperature gauge, and I’m set! Same with a fryer. I sure hope you have good luck with this though.!!

I can remember that a few days ago someone posted images of a fancy pants deep fryer with touchscreen. And OP of that post was everything but happy about it due to electronics bugging around and the fryer not working because of it.

We got new appliances and my wife picked out a stove with a touch screen. I just go “whatever” with what she picks out but I shoulda hit the brakes on that. I don’t see it lasting more than a month after the warranty is up.

Industrial grade stuff has always been “fewer features, less flashy, but more expensive because it actually works and can be fixed when it breaks.” Like the Robot Coupe. 3 buttons is all you need. Or commercial vacuums (like, for cleaning floors) that literally just have an on/off switch.
And there’s a reason it’s been that way.

I worked at a central prep kitchen that dropped $40k on a machine to cut our potatoes for fries. It was awesome and then withing 3 months they decided to go with frozen fries. They used that machine as an excuse as to why no one got raises that year. Fuck that company.

Why do you guys spend so much money on this shit? I’m building a tiny commercial kitchen. Picked up a used 3 compartment sink for $250 on facebook marketplace. All the bells and whistles. Would have cost me $4k to get the exact same model and faucets brand new. Just hit it with barkeepers friend, replaced all the orings and it’s looking great. Needed a 2 door worktop freezer and found a good one for $400 that normally goes for almost 3k. Bought new gaskets for it. Like, just buy a good regular fryer. You don’t need one with bluetooth that you can preheat from your car and play wordle on. Good lord. I get that commercial use requires a more robust machine because any downtime is unacceptable, but the way some of you throw your money around is insane. How are you making any profit like this?

Filter twice a day, extend tf out of your oil. Get your moneys worth but then again they’ll probably just dump oil everyday since they dumped that much down the drain already.
Driving a Ferrari as an everyday car is a waste of money but fun and cool looking, especially when you’re not the one who bought it lol
